Who needs Nandos?
Peri Peri Chicken & Spicy Tomato and Red Pepper Rice
First marinade some chicken thighs or drumsticks over night in a peri peri marinade. I prefer to skin them first but this isn't necessary. You can make the marinade yourself but what's the point when the Nando's one is so damn good and do I look like feckin Delia Smith?
For the rice par boil some long grain rice until it is a very firm bite. You want it slightly undercooked. Drain and set to one side to cool.
On a hob heat a little vegetable oil in saucepan. Add half a finely chopped spanish onion, one finely chopped garlic clove and a little chopped red pepper. Fry until soft.
Add half a tin of chopped plum tomatoes.
Add a generous tablespoon of paprika and crushed chilli flakes.
Add about a Qr of a tin of kidney beans. If you like sweetcorn you can bung some of that in at this stage too.
Add salt and pepper to taste and leave to simmer on a very low heat for about 20 mins.
While all this is goin on start roasting your chicken at about 180 d or GM5 for about 15 mins.
After 15 mins remove and baste with some more marinade.
Transfer to a non stick frypan with a tiny bit of oil and sear until the baste caremlises into a nice crispy spicy coating.
Serve on a bed of the tomato rice
